Cut the top of your apple off and set aside. Scoop out the body of the apple with a melon baller and fill with melted caramel or dipping sauce of your choice. (Make sure to melt your dipping sauce in a bowl and NOT the actual apple)

Healthy Mac N Cheese

Broccoli & White Cheddar Mac & Cheese

Printable Recipe
Serves 2-4 as a main dish, 4-6 as a side
Buy blocks of cheese and grate it yourself. It makes a world of difference! The pre-shredded stuff just doesn’t melt as smoothly. Plus, the more calories you burn shredding cheese, the more mac & cheese you can eat.

Ingredients

3 cups frozen baby broccoli florets
1/2 pound elbow macaroni
1 1/2 tablespoons unsalted butter
2 tablespoons flour
1 1/3 cups milk
4 ounces sharp white cheddar cheese, grated
2 ounces pepper jack cheese, grated
salt to taste

Directions

Microwave broccoli florets in a large, microwave safe bowl according to package instructions until tender (usually 4-5 minutes). Drain off any water and set aside.
Fill a large pot with water and bring to a boil. Add elbow macaroni. Boil according to directions until al dente. Drain.
Meanwhile, melt butter in a saucepan over medium heat. Add flour and whisk to form a paste (roux). Cook 1-2 minutes to eliminate raw flour taste. Slowly pour in milk, whisking briskly to remove lumps. Continue cooking over medium heat, whisking constantly, until milk mixture thickens. Remove from heat and whisk in shredded cheese. Add salt to taste.
Add drained macaroni back to pot. Pour cheese sauce over macaroni, add broccoli, and stir to combine.

Strawberry Pineapple Smoothie

The best and healthiest smoothie ever! 1 cup of ice, 1/2 cup of non-fat strawberry yogurt, and 1/2 cup of cubed pineapple. Blend for a delicious and lowfat smoothie!

Fettuccine with Ricotta, Tomatoes and Basil

Ingredients:
1 (9 ounce) package refrigerated fettuccine
3 teaspoons butter or margarine, melted
3/4 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 large tomato, chopped

Directions:
Cook and drain fettuccine as directed on package. Return to saucepan. Stir together butter, ricotta cheese and 1/3 cup of the Parmesan cheese. Toss with hot fettuccine. Top pasta with tomato, basil and remaining Parmesan cheese.

Guilt Free Chocolate Peanut Butter Smoothie


I'm a smoothie addict. Actually, I'm a healthy smoothie addict. I'm always on the hunt for new and creative recipes that aren't totally bad for me and still taste great. I recently asked Crystalin to try out a few smoothie recipes for Glitter Guide. One of her finds was a chocolate and peanut butter smoothie that tastes like it could be decadent but is actually guilt free! It didn't disappoint. I'll definitely be adding this one to my list of favorite late night teats.

Chocolate Peanut Butter Smoothie: 
2 Tbl unsweetened cocoa powder
2 Tbl peanut butter (I used Whole Foods Organic Creamy)
½ banana
1 cup almond milk (I used unsweetened)
splash of vanilla extract
ice (the more you use the thicker it will be)

Blend, serve, enjoy!

Riesling Strawberry Slushy
Ingredients
  • 2 cups hulled strawberries
  • 1 bottle [750ml] dry Riesling
  • 1 tablespoon fresh lime juice
  • 2 tablespoons sugar
Directions
Reserve 1 cup of the Riesling – cover and place in the fridge to chill.
In a food processor, puree strawberries with the remaining wine, lime juice and sugar. Pour the mixture into ice cube trays and freeze until solid. When you’re ready to serve [or drink], puree the ice cubes with the remaining wine in your blender.
Enjoy!
Serves 6

Blackberry-Grapefruit Make-Ahead Smoothie


Blackberry-Grapefruit Make-Ahead Smoothie

1 1/2 – 2 cups blackberries
1 small grapefruit
1 tsp. Antioxidant Omega 3 Greens
1 TBSP. sugar
1/2 C plain yogurt
1/2 C lowfat milk
1 cup Florida’s Natural Orange Juice

Peel and de-seed the grapefruit and add it to your food processor or blender. I chopped mine up with a knife on a cutting board, which was a little clumsy, but it worked. There was a lot of juice left on the cutting board, so I poured that into my food processor as well. I was inspired to make a smoothie using grapefruit because we had a bag of this fresh, delicious fruit that a visiting relative had brought us from his backyard in Arizona, so I was really eager to put it to use!
Next, add the blackberries. Mine were frozen in a large block, so I had to hack them into pieces to make them fit into the food processor. Fresh would work equally well, although you might find you need to add a little extra juice. These blackberries came from our Grandma’s backyard, so this is a family-grown smoothie! Add the greens, sugar, and yogurt, then pour in the milk and orange juice.
Cover, and refrigerate overnight.
The next morning…
Simply pull the top half of the blender out of the fridge, plug it in, and blend until smooth!Yum!
I was worried about the consistency being affected by preparing all the ingredients ahead of time, but it was unfounded. This smoothie had a great, unique taste and is just the thing for those rushed early mornings! If you want to feel your best during cold & flu season, getting in a healthy breakfast is great way to start. For those who are in a hurry, smoothies offer a way to pack in nutritious fruit for a breakfast-on-the-go. And if you do come down with a cold, smoothies are a very smoothing way to stay hydrated!

Blueberry Smoothie

Blueberry Smoothie Recipe
1/2 cup wild blueberries
1/2 cup wild blueberries,chopped into small pieces
1 tablespoon honey
1  banana
1/2 cup of ice cubes
Method:
Start by blending the ice, banana, honey, and unchopped blueberries on a high speed.
Add the chopped blueberries into a cup before pouring the smoothie.
Stir and enjoy a great fruity smoothie.
