58 Calorie Triple Chocolate Chunk Muffin!!!

Triple Chocolate Chunk Muffin Knock-Offs of Whole Food’s 6 Dollar per 4 Chocolate Chunk VitaTop Muffins
Ingredients:
1 3/4 c oats
  3 egg whites 
  3/4 cup unsweetened cocoa 
1/2 cup unsweetened applesauce
1 tsp. vanilla extract
1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1/4 tsp. salt
1 cup hot water
1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)
Preheat oven to 350 degrees. Line 2 (12-cup) muffin pans with foil cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.Place mixture in a bowl and gently stir in 1/2 of the chocolate chips (set the rest aside). Scoop mixture into prepared muffin pans.Place muffins tins in the oven for 10 minutes.  After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.Place  the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean. *Note, you could skip this step by putting all of the chips in the batter, and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!Cool muffins before removing from pan.   2. Your instructions say to "blend until oats are ground and mixture is smooth." What oats are you talking about? There aren't any oats listed in the ingredients. Is something missing from the ingredient list?

  4. for the baking powder and baking soda...is it 1/2 tsp? or is it 1 and 1/2 tsp?

  5. I use the egg whites in the carton sometimes so that I don't waste eggs...any idea about how much I should measure for that in order to get the "3 egg whites"

  7. This recipe is the worst. The oats will not grind when combined with the other ingredients. The recipe should tell you to grind them first. The muffins also did not rise at all and were still liquid in the center after the full 15 minutes of baking.

    1. The oats ground up fine when I did them. My muffins didn't rise though either, but they had a soft and fluffy texture with the 15 of baking them. Try it again, they taste so good and are worth the effort!!

  9. Omg, they taste so awful..... you can absolutely tell they are made with fake sugar, and I used 50/50. I'm a pastry chef, and the recipe was followed exactly. It has that funky after taste from the fake sugar. If you're going to make them, make sure you spray the muffin liners, and grind the oats completely before you add the rest of your ingredients.

  11. I blended the oats before adding the extra ingredients. After blending in the extra ingredients the batter seemed runny so I added an extra 1/2 cup of blended oats.
    Cooked for 17 minutes.
    These were incredible definitely making them again :)

  13. I LOVE this recipe and I use it all the time. I've even done it in two 8X8 pans as cake. It does require that I bake it a lot longer than it calls for, and I use raw sugar, but I think it's delicious. It's one of my all time favorites.

  14. Ok, I have no intension to be rude here, but this recipe is a total fail. I tried it twice and both times I had to throw the entire thing away. They don't grow, in fact, once I removed them to throw in the extra chocolate chips, they sunk completely. The batter is very runny (even with an extra 1/2 cup of oats like it was suggested above), and the chocolate chips just sink to the bottom. We tried to eat it, even with all said, and it tasted bitter, with a bitter after-taste. I have to mention that I'm always trying on different recipes and this is the first one that was a major fail. I would NOT recommend this one to anybody. I lost money and time on this. Very disappointed.

  15. the batter was so runny and the cupcakes were terrable. I checked to see if I had made a mistake on the liquids but the receipe did say 1 cup of water. What a waste

  16. I made these following the recipe exactly and they turned out just fine. I think it's more of a cupcake then a muffin (hence the runny batter), but they were pretty good and I would make them again. Maybe next time I'll add some coconut or PB2

  17. I made them using honey instead of sugar substitute, and they turned out great! I mixed the batter with the electric hand mixer on high until most of the oats were chopped finely which gave it more of a muffin or whole grain texture. Will definitely make again!
